Shiwan Pork Tripe


Shiwan pork tripe is a local famous dish of Hengdong County, Hengyang City. Its texture is largely decided by the cutting techniques and the secret ingredient lies in the yellow peppers. Many diners who once gave it a try were overwhelmed by the spicy and crisp taste of this dish.

It takes pork tripe and dried yellow peppers as raw materials. First, we should fry the peppers and garlic with hot oil until it scents mouthwatering smell. And then the sliced pork tripe should be marinated with salt, soy sauce, oyster sauce, MSG and rice wine for a while and stir-fried in hot oil until it is rolled up. We’d better immediately add the dried yellow bell peppers, scallions and pepper when it is medium well. After stir-frying well, we can dish up.
