Crispy fennel cake is a kind of famous traditional food in Liuyang. The puff pastry is filled with the unique taste of fennel. The main ingredients are flour, tea oil, white sugar and maltose, and the condiments are kumquat flowers, foeniculum vulgares, processed sesame, laurel oil, crushed rock candy and so on. What’s more, this kind of food requires at least 10 stages of preparation.
It is said that Liuyang fennel cakes have the history of three hundred years. With a long-standing reputation, the fennel cakes, along with fireworks and firecrackers, grass cloth, chrysanthemum stone, and fermented blank beans, are five local specialties of Liuyang.
